Dry Age Beef
Sourced from small farms & abattoirs. Our Angus beef is hand selected from Clem Tullys Farm in Longford and Derek Walsh Carrick-on-Suir. We dry age our beef for a minimum of 30 days up to 50 days in our purpose built dry age fridge with Himalayan Pink Salt blocks. We sell select breeds such as Angus, Hereford & Belted Galloway. We also sell Japanese and Irish Wagyu. We are happy to custom cut any cut for you on request.


Lamb
We source our lamb from farmers in and around the Kildare and Wicklow area, our lambs are fed grass & grain and are farmed using traditional methods. We hang our lambs to improve the flavour and texture so you get the best possible taste. Lamb is perfect from the quick grill chops to the slow cooked shoulder.

Dry Cure Bacon
We source all of our bacon from Crowes Farm Co. Tipperary. The name Crowes Farm is known throughout Ireland for the high quality pork and bacon, reared ethically and produced to the highest standards. Outdoor reared allowed to roam freely in their natural habitat.


Free Range & Organic Chicken
We source our chickens from 2 suppliers. ShannonVale Co. Cork supplies Irish free range & Organic chicken. They are members of Origin Green and recently installed solar panels to their processing plant and hatcherys.
Billy Gray of Feighcullen Farms Co. Kildare supplies us with our Free range Chicken, Duck & Turkey. Billy uses all organic feed for his poultry and uses no pesticides on his farm.
Gourmet Food
We also make a huge variety of gourmet food products and are currently working to eliminate palm oil from any marinades we use. The majority of our products are gluten/allergen free. You will find lots of small Irish artisan produced products on our shelves. When you support us we support them.

Olive fed pork – Colin Marry, Co. Louth. Fed on a diet of Rapeseed, nuts & olives. Colin is committed to improving the husbandry & welfare of commercially raised pigs.
Dermot Allen Winetavern Farm Co.Wicklow
Prize winning Rare breed Free Range Pork such as Tamworths, Oldspots & Sandyblacks. Dermots pigs roam free and forage naturally on his pesticide free farm.
