We source our Belted Galloway from Tom Brennan, Co.Carlow . Belted Galloway are known for their heavier distribution of marbling throughout the beef.
We dry age the beef on the bone to increase maximum flavour and tenderness. All beef is dry aged for a minimum of 28 days in our salt ageing chamber.
