We source boar from Bartosz Surman who farms in Stoneyford, Co.Kilkenny. Bartosz rears a small herd of boar who forage around his and neighbouring farms for nettles and wild flowers. He tops up their feed with organic apples from High Bank Orchard and whey from his homemade goats cheese. This means the animals are fed a natural diet and not topped up with gmo grains.
We dry cure the bacon with a nitrate free cure and air dry in our purpose built Himalayan salt chamber and slice in store. Boar has a deeper red colour and a heavier layer of fat than pork.
