We source our dexter beef from Joe Hayes Co Galway. The Dexter beef they produce is tender, and regarded for darker colour and its sweet, slightly nutty taste. The breed is pre-disposed to develop unique ‘spider’ marbling, and is high in CLAs, Omega 3, Omega 6 and Omega 9.
We dry age our beef for 4 weeks to break down the enzymes and increase the flavour. This results in a soft juicy steak.
