We source our Friesian beef from specialist farms around Ireland. Friesian beef has typically been out on the grass for 7-9 years. This creates a deep beefy flavour and a beautiful yellow fat covering. Friesian cattle spend their days leisurely strolling around eating grass all day long.
We then dry age the beef to perfection in our Himalayan Salt chamber.
This is truly specialized, and not yet mainstream in Ireland.
