We have sourced organic pork from Rathgarogue Farm, Wexford. The pigs are reared in an outdoor system and are allowed the freedom to roam, root and wallow, enjoying all the Irish weathers!
They are fed only certified organic oats also grown on the farm and with plenty of silage and treats from the farm vegetable patch.
We dry cure and slice in store using a nitrate free low salt cure (2.5%)
Ing: Pork, sea salt, castor sugar, light brown sugar,Minimal trace E250(nitrites) less than 1%
