Wild Irish rabbit from Co. Wicklow.

Perfect for stew or casserole , can be roasted in the oven. We can chop into pieces if required just pop a note on your order.

  1. Roast: 220℃/Fan 200°C/Gas 7 for 20-25 minutes and rest for 15 minutes.
  2. Haunches, back legs or young rabbits: 10 minutes on each side on a medium heat.
  3. Strip loins – pan fry for 1-2 minutes.
  4. Older jointed rabbits – casserole for approximately 1 hour
