We dry cure our own back bacon in a nitrate free cure, low salt just 2.5%.
Our pork is reared just 54kms from our door.
We use Dermot Allens free range rare breed pork, Dermot farms in Baltinglass Co. Wicklow mostly Oxford Sandy & Blacks breed of pig. Dermots pigs are allowed roam free and forage on the farm, their feed is topped up with vegetables from the neighbouring farms.
