Dermot Allen farms in Baltinglass Co.Wicklow. He rears prize winning Oxford and Sandy Blacks. Dermots pigs are allowed roam free and forage naturally on the forestry and land. Dermot uses no pesticides on his lands and the pigs feed is supplemented with veg grown on the neighboring farms.
The centre cut of the pork loin chop, includes the fillet. Bone in and skin on for extra flavour.
