French veal, melts very little when cooked. Its typically white flesh distinguishes it from its European neighbors.
A few rare farms also give us access to an exceptionally white calf since it is raised 100% on its mother’s milk. Calves are allowed to feed and stay with their mother, more ethical and less stress for both animals.
