The whole beef brisket is a large cut of meat that is taken from the chest area of the butchered steer. The whole brisket has a large amount of fat, part of it internal and the rest found as a layer on one side. A good brisket will have fat marbled throughout the meat, which helps keep the beef tender and juicy. Perfect for a crowd.

When looking for a brisket for your smoker you want an untrimmed or “packer” cut. This cut has the point and the flat part together. These briskets should have a nice even fat cap. These are perfect for the long slow cook.

These typically come in weighing between 5- 7kg in a full piece.

    Amazingly fast delivery allowed for a great night of low and slow cook in an offset smoker. After 15 Hours on the pit and 6 resting the results were superb.
