We dry cure our own bacon using a nitrate free low sugar cure, air dried for crispness and sliced thickly in store. Just 2.5grms of salt per kg.

Our pork is reared just 54kms from our door.

We use Dermot Allens free range rare breed pork, Dermot farms in Baltinglass Co. Wicklow mostly Oxford Sandy & Blacks breed of pig. Dermots pigs are allowed roam free and forage on the farm, their feed is topped up with vegatables from the neighbouring farms.
