We dry cure our own bacon in house using our nitrate free cure. We use free range pork from Winetavern Farm Co Wicklow and organic pork from Rathgarogue Farm Co Wexford. This gives us a great selection of free range and organic hams and rashers. Amazing flavour and taste.
